How would you describe your cooking style?
“My food style is a fusion of many cultures as Mauritius is a melting point of cultures: Indian, French, Chinese.”
What is your favourite ingredient to cook with?
“Growing up mum never used potatoes much. I would choose this as my favourite ingredient. It’s very versatile and you can create great dishes. They can be mashed, roasted, fried, and you can add so much flavour to them or keep simple. Currently I love making rostis, with spring onion and kimchi.”
Why did you take part in the show?
“I entered this year as I finally had the time to give it my all. It also kept me focused having just lost my mum.”
Would you like to work professionally in the food industry?
“I would like to work in the food world creating recipes that are cost effective. There is such a waste in the high-end Michelin food industry.
“I would love to use ‘the trimmings’ to create dishes. A lot of the Michelin restaurants are always fully booked. It would be lovely if they had a sister restaurant alongside using the trimmings. I would also love to be a food product buyer. On my travels I come across lots of products which I haven’t seen in the UK, and I can picture where they can be sold. “
