Haydn for MasterChef: The Professionals S18 Heat 2 / BBC
Age: 25
Lives: With fiancée in Bermondsey, London and originally from Essex
What is your background in the industry?
“I trained at Westminster Kingsway College, where I really found my feet in the kitchen. My first job was at Pétrus by Gordon Ramsay, which was a huge step into the industry and an incredible place to learn discipline, precision and consistency at a young age. One of the most memorable places I’ve worked since then is Trinity in Clapham, London — a kitchen that really pushed me creatively and technically. I’m now working at the Prince Arthur in Belgravia, a Basque-inspired pub where I’ve developed my cooking centred around fire to bring out the best flavours.”
How would you describe your cooking style?
“My style is mainly classic European. I’m French-trained, but I love using Italian and Spanish ingredients — big flavours, good olive oil, great cheese, that sort of thing. I like food that’s simple but beautifully cared for.”
What are three ingredients you couldn’t live without?
“Butter, cheese and olive oil.”
Why did you take part in the show?
“I always told my nan and grandad that I’d do it for them one day. I wanted to keep my word and stepping into the MasterChef kitchen feels like they’re here with me.”
The new series of MasterChef: The Professionals is ongoing on BBC One and iPlayer.
